Easy Dr. Seuss Inspired Cupcakes for Read Across America Day

If you need easy, quick cupcakes for Read Across America Day or a Dr. Seuss inspired theme party, I've got just the recipe for you! Do they remind you of Thing 1 and Thing 2? I hope so!


This blog is all about easy recipes, so I assure you, you can do this!


You Will Need:

-red cupcake liners
-vanilla frosting
-food coloring
-white cake mix (you can use yellow but it doesn't look as good for the final product)

Bake your cupcakes in red liners as directed on the package (or use your own recipe). Allow to cool. Add a dollop of white frosting on each cupcake.  Dye the remainder of your vanilla frosting blue (I used 9 drops of liquid food coloring) for the 'hair' on top.

I  used my trusty cupcake decorator gun (affiliate links below) to make the swoosh of blue hair, but you can also use a piping bag or a spoon if you're gun-less.


And there ya have it! I found this idea on Pinterest but there was no link-back to the original creator, so I wish I could give credit where credit is due. Whoever thought of it, I love you. It saved me lots of time getting ready for Read Across America Day!
